Vegetarian Chilli

A great vegetarian valentine's dish!

1 large onion chopped
1 large sweet potato cut approx. 2cm dice
1 clove garlic
1 tbls of Smoky Paprika Oil
1 tsp smoked paprika
1 red pepper cut approx. 2cm dice
1 tbls tomato purée
1 x 400g chopped tomatoes
Salt and pepper
½ tin of kidney beans and ½ tin of black beans, or you can just use 1 tin of your choice
Garnish with coriander and anything else you put on your chilli
In a large saucepan gently melt a tbls of Smoky Paprika Oil, add the chopped onion and red pepper and soften for 5 mins
To the pan add the sweet potato, 1 clove garlic, smoked paprika and tbls of tomato purée. Cook for 2 minutes. Add the tin of chopped tomatoes and ½ tin water to the saucepan, add salt and pepper
Cook this for about 20 mins on low until the potatoes are tender, you might need more water
When the sweet potatoes are nearly ready add the beans and cook all together for 5 mins
A really good meal to cook ahead and reheat when you need it, or can be frozen
