Red Cabbage with Smoky Paprika Coconut Oil & Citrus Bursts

Red Cabbage is a classic Christmas recipe, this recipe adds the extra dimension of the Smoky Paprika and with it hints of Moroccan flavour. Add an interesting twist to a classic recipe. What's more, it is so easy to make!
- 2 Medium Onions
2 Tbsp Smoky Paprika Coconut Oil
- 1 Whole red Cabbage
- 1 Orange, juice & rind
- 1 Lemon juice & rind
- 1 Tbsp Brown caster sugar or Maple Syrup
- 2 Tbsp Balsamic vinegar
- 50g Cranberries
- Salt & pepper to taste
Thinly slice the onions & cabbage. Peel the orange & lemon, finely chop 2/3 and thinly slice 1/3. Squeeze the juices. Chop the cranberries. Gently heat a frying pan with 1Tbsp Smoky Paprika Coconut Oil, add the onion and sweat for 3 minutes, then add the red cabbage, vinegar, lemon and orange juice and 2/3 of the finely chopped peel. Cook for a good five minutes, then add the cranberries, cover and cook over a gentle heat for further 10-30 minutes, depending on how well cooked you like your cabbage.
This recipe is not too sweet so if you prefer you can add more sugar or syrup at the end to suit your taste.
