Paprika Spiced Giant Couscous, BBQ Courgette, Pepper & Paneer Salad

2 Tbsp Zing Foods Smoky Paprika Oil
100g of Panner (vegan replacement - fry 2 large slices of sourdough in the oil and serve warm cut into squares)
1 Courgette
1 Yellow pepper
1 Lemon - zest & peel
100g Giant wholemeal couscous
1 Lime juice, 1/2 small handful of parsley leaves, salt & pepper to taste
Cook the couscous according to the instructions on the packet. Drain and melt in the smoky Paprika Oil.
Slice the Paneer in half to create two thin slices.
Deseed and cut the pepper into 1/4 pieces.
Slice the courgette into thin slices.
BBQ all three for 3-5mins, turning occasionally. Keep an eye on them, as they cook quickly.
Chop the cooked courgette, pepper & paneer. Add to the lemon juice and zest to the spiced couscous. Add the parsley and season with salt and pepper.
This salad should be served warm or at room temperature.
