Chachouka is a North African dish, I have used our Smoky Paprika Coconut Cooking Oil as the paprika flavours we blended were a nod to North African cuisine. I’ve used inspiration from the River Cottage "Veg Everyday”.
20g Zing Foods Smoky Paprika Coconut Cooking Oil
1 large onion finely sliced
1 garlic cloves crushed
1 red Pepper thinly sliced
1 yellow pepper thinly sliced
400g tin of chopped tomatoes
2-4 eggs (optional) or for a vegan option use a vegan mozzarella instead of eggs
Salt and pepper to season
Gently melt the Smoky Paprika Coconut Cooking Oil and continuing with a low heat add the onions, cook for 10 mins
Add the peppers and garlic, and cook for a further 20 minutes. Then add the tinned tomatoes and cook gently for a further 15 minutes. Scoop out enough space for the eggs/cheese rounds and bake for 10-15 minutes at 180 degrees
