This is a real heart warming noodle soup, perfect for chilli days and when you want a quick meal packed with mushrooms and a little kick.
It requires only a few ingredients, and you can add or modify depending on your taste preference.
Prepare the noodles according to packet instructions.
Whilst the noodles cook, prepare the vegetables.
Melt 1/2 Tbsp of the Aromatic Lemongrass Oil in a pan and gently fry the chopped mushrooms and carrots for 2 minutes; add some water if the pan becomes dry.
Add pak choi, Spring onions and chilli and cook gently for 1 minute.Remove from heat and add the remainder of the Aromatic Lemongrass Oil.
When this has melted, add the boiled water and soya sauce. Leave to cool down enough to taste.
Add salt & pepper.
Finally, mix in cooked noodles and serve with coriander and extra lime.
